Mom's Spaghetti and Meat Balls

  • 1 lb ground beef
  • 1 lb ground pork
  • 2 eggs lightly beaten
  • 1 cup Italian styled bread crumbs
  • 1/2  teaspoon dried oregano
  • 1/4 cup finely grated Pecorino Romano cheese
  • 8 cloves of garlic
  • 4 minced
  • 4 sliced thin
  • 1 1/4 teaspoon kosher salt
  • ground pepper
  • 1/4 cup extra virgin olive oil
  • 1 yellow onion finely chopped
  • 2 cans crushed tomatoes, 26.5 ounces
  • 1 cup dry white wine
  • fresh basil leaves

  1. Combine beef and pork, eggs, bread crumbs, oregano, garlic minced, cheeses, half of the salt, and pepper, in a large bowl. Using hands thoroughly mix until evenly incorporated. Roll into meatballs, slightly larger than golf balls, setting them on a baking sheet while you roll.
  2. Heat oil over medium,  heat in large Dutch oven until shimmers. Work in batches and take care not to crowd them, saute meat balls, turning frequently, until brown on all sides, about 5 minutes. . Using a slotted spoon transfer from pan back to baking sheet.
  3. Reduce heat to med low, saute onion 2 minutes, add the slice garlic stir and cook 1 minute.  Add wine and increase heat and bring to boil.  Reduce heat and simmer 2 minutes.Add crushed tomatoes, basil and remaing salt, 3/4 teaspoon, and pepper.  Add meatballs along with any juice.  Simmer partialy covered for 1 hour and 20 minutes.
  4. Cook spaghetti according to package.  Drain and serve with meatballs, including sauce on top.  Garnish with more basil and grated cheese.
  1. Made this for supper for the 2 of us and then had enough for 2 more meals to freeze. Just have to make the pasta. (Feb 17, 2019)
