- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 2 tablespoons sugar (brown or white)
- ½ teaspoon salt
- 1 ¾ cups unsweetened plant-based milk (soy, almond, oat)
- 2 teaspoons apple cider vinegar or lemon juice
- ¼ cup melted coconut oil or vegetable oil
- 1 teaspoon vanilla extract
In a small bowl, combine plant-based milk with apple cider vinegar or lemon juice. Let sit 5-10 minutes to curdle into vegan buttermilk.
- In a large bowl, whisk together flour, baking powder, sugar, and salt.
- Add the vegan buttermilk, melted coconut oil, and vanilla extract to the dry ingredients. Stir gently until just combined; some lumps are fine.
- Preheat and grease your waffle iron. Pour batter to cover the waffle grid (about ½ cup per waffle).
- Cook according to your waffle iron’s instructions until golden and crisp, usually 3-5 minutes.
- Remove and keep waffles warm in a low oven if making batches. Serve with vegan butter, maple syrup, or fresh fruit.
