Roasted Pork Tenderloin and Maple Glazed Apples

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground cinnamon
  • 2 (12-ounce) pork tenderloins, trimmed
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 2 pounds Granny Smith apples, sliced 1/2 inch thick
  • 1 shallot, thinly sliced
  • 3 tablespoons maple syrup
  • 1 1/2 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  1. Preheat oven to 425°.
  2. Combine 1/2 teaspoon salt, black pepper, and 1/4 teaspoon ground cinnamon; rub over pork tenderloins.
  3. Heat a large ovenproof skillet over medium-high heat. Add olive oil. Add pork; sauté 4 minutes on each side. Remove pork, and reduce heat.
  4. Melt butter. Add apple slices and shallot to pan; sauté 1 minute. Stir in maple syrup, lemon juice, 1/4 teaspoon salt, and 1/4 teaspoon ground cinnamon; cook 4 minutes. Stir.
  5. Return pork to pan. Roast at 425° for 12 minutes or until a thermometer registers 145°.
  6. Remove pork from pan; let stand 5 minutes.
  7. Slice pork; serve with apples.
