Cajun Seasoning

  • 1 tsp smoked paprika
  • 3/4 tsp fine sea salt
  • 1/2 tsp onion powder
  • 1/2 tsp dried ground oregano
  • 1/2 tsp dried ground thyme
  • 1/4 tsp ground black pepper
  • 1/4 tsp cayenne pepper
  • 1/8 tsp red pepper flakes

Other Ingredients

  • 1/2 pound boneless, skinless chicken thighs
  • 2 TBSP unsalted butter
  • 1 red bell pepper, cut into 1/2" pieces
  • 1/4 cup diced red onions
  • 2 tsp minced garlic
  • 1/2 pound smoked sausage, cut into 1/2" slices
  • 1/2 cup chicken broth
  • 1 1/2 cups heavy cream
  • 1/4 cup grated parmesan cheese
  • 1/2 tsp fine sea salt
  • spiralized zucchini noodles (optional)
  1. In a small bowl, mix together the spices for the cajun seasoning.
  2. Cut the chicken thighs into 1" pieces. Coat with 1 tablespoon of the cajun seasoning.
  3. Heat the butter in a cast iron skillet over medium heat. Add the bell pepper, onions and garlic and saute until the pepper is soft and the onions are translucent, about 4 minutes. Add the seasoned chicken and sear on all sides until cooked through, about 3 minutes per side. Add the sausage and sear on both sides, about 1 minute per side.
  4. Add the broth to the pan to deglaze it. Using a whisk, scrape the bits from the bottom of the pan to incorporate them into the sauce. Add the cream and Parmesan cheese and heat until simmering. Season with the salt and remaining cajun seasoning. Simmer on low until thickened, about 3 minutes.
  5. Serve over zucchini noodles.
  1. If you have non-keto eaters, or need more carbs, this is good served over cooked perogies instead of zucchini noodles. (Oct 24, 2017)
  2. Can substitute cashew cream for heavy cream, and omit parmesan for a dairy-free option. Soak 1 cup raw cashews for several hours, then blend with 1/2 cup water, 2 TBSP olive oil and 2 TBSP lemon juice. If sauce gets too thick while simmering, add some water to reach desired consistency.
